If the value hasn't changed for a certain amount of time (say, 2 seconds), store it's new value in EEPROM so that it'll be restored when the power turns back on.

On second though this is not an issue at all. If the voltage drops below 3V the display turns off but the ATTiny keeps on running in sleep mode. If you then connect it to USB power it should wake up with the old value.

If you leave it long enough to run below the cut-off voltage of the LiPo protection then you're probably not interested in what the value was anyways.
